Clarified mango lassi
Mocktail — Prep time: 1 day
Steps
First, brew the oolong tea with lightly cracked green cardamom pods. Strain completely and allow the tea to cool to room temperature. The tea must not be warm before mixing.
In a large container, combine the mango syrup and cooled oolong tea. Stir to combine. Add the yogurt and mix thoroughly until completely smooth and homogeneous, with no visible lumps.
Slowly add the lemon juice while gently stirring. The mixture should begin to curdle as the acid reacts with the dairy proteins. Once all the lemon juice has been added, stop stirring.
Cover the container loosely and allow the mixture to rest at room temperature for 45–60 minutes, undisturbed. During this time, the curds will fully form and separate from the liquid.
After resting, strain the mixture gently through a fine sieve to remove the bulk of the curds. Pass the liquid again through a coffee filter or fine cloth to achieve full clarity. Do not press or squeeze the curds, as this will cloud the final liquid.
Once clarified, transfer the liquid to a clean bottle and refrigerate.
